Bubba's Roastery, Haad Yao, Koh Phangan - Roastery, Coffee and Breakfast
The Bubba's Coffee roastery: a large coffee bar with a green-tiled wall, a leafy back courtyard and breakfasts. We visited in February 2025.

Bubba's Roastery is one of the best-known cafes on Koh Phangan, and also the place where the beans for the Bubba's Coffee chain are roasted. The Haad Yao branch combines a working roastery with a large, bright cafe, a breakfast and brunch menu and a seating courtyard surrounded by greenery.
It's one of the standout places in the island's cafe scene, especially if you're looking for good coffee and a Western-style breakfast.
Bubba's is at the start of the Haad Yao cafe strip, opposite the 7-Eleven and next to Pura Vida. Further along the street, up the hill, is What's Cup, a cafe overlooking Haad Yao bay.
We visited Bubba's Roastery on 19 February 2025, while staying in the Haad Yao area, and ordered breakfast and coffee.
What makes Bubba's Roastery special?
Bubba's isn't just a cafe serving beans from an outside supplier. The Haad Yao branch is home to the chain's roastery, which supplies the coffee for all three Bubba's cafes on Koh Phangan.
The chain's approach is to control the whole coffee process, from the green bean to the drink served in the cafe.
The roastery also supplies coffee to other cafes and businesses on Koh Phangan, Koh Samui and Koh Tao, alongside professional training for coffee staff.
A cafe with a working roastery
Roasting is part of what happens on site, not something done in a distant factory.
So the Haad Yao branch serves both as the chain's professional hub and as a cafe serving breakfast, brunch and coffee throughout the day.
That's a significant difference from cafes that simply serve ready-roasted coffee, and it makes the place particularly interesting for coffee lovers who want to see the professional side of things too.
What is the cafe like?
Bubba's Roastery is housed in a spacious building with tall windows that let in plenty of natural light.
The main hall is fairly large, and at its centre is a coffee bar with a green-tiled wall, espresso machines and a drinks station.
The design mixes modern lines with natural materials and plants, creating the feel of a city cafe set on a tropical island.
The coffee bar and the indoor hall
The coffee bar is one of the most striking features of the space.
The green-tiled wall gives it real design presence, and the espresso machines and brewing equipment sit right at the front of the action.
The indoor hall suits anyone who prefers to sit inside, out of the sun, with tables for breakfast and coffee.
On the morning of 19 February 2025 the place was very busy, and the indoor hall was almost completely full.
The back courtyard - a quieter corner
Behind the main hall is a seating courtyard paved with painted tiles.
The courtyard is surrounded by greenery and large potted plants, with small tables where you can sit in a different atmosphere from the indoor space.
During our visit, when most of the seats in the hall were already taken, the courtyard was calmer.

The contrast between the two spaces is one of the place's strengths: you can choose between the busy atmosphere of the main cafe and a quieter seat outside.
That said, on hot, humid days bear in mind that you feel the heat and humidity more in the courtyard.
Breakfast at Bubba's - what did we order?
During our visit we ordered two different breakfast dishes and coffee.
The Bubba's menu focuses on breakfast and brunch, with dishes that combine familiar Western ingredients alongside bowls, vegetables and other options.
The two dishes we ordered show that variety: a classic breakfast with eggs and bacon, and alongside it a bowl based on falafel and vegetables.
Breakfast with omelette, bacon and toast
The first dish was an omelette with bacon, sliced tomatoes, toast and butter.
It's a classic Western-style breakfast, the kind that suits anyone who likes to start the day with eggs, bread and familiar sides.
It came neatly plated, with the different elements laid out side by side.

Falafel bowl, chopped salad and sourdough
The second dish was a bowl with falafel balls, a chopped vegetable salad and a slice of sourdough bread.
Compared with the eggs-and-bacon breakfast, it was a different style of dish, built around vegetables, pulses and bread.
It shows that at Bubba's you can also choose dishes that aren't based on a traditional Western breakfast.

The coffee
Alongside the meal, coffee was served in a large cup, with a heart drawn in the milk foam.
It looked carefully made, with a smooth layer of foam and latte art on top.
Coffee is a central part of the Bubba's identity, so even if you've come for breakfast you may be curious about the beans and blends on offer.

Where does Bubba's coffee come from, and can you buy beans?
One of the interesting things about Bubba's is its emphasis on coffee beans grown in Thailand.
The chain mainly uses beans from the growing regions in the north of the country, including Chiang Mai, Chiang Rai and Tak.
Northern Thailand is a significant Arabica-growing region, thanks to its mix of mountainous areas, altitude and a climate suited to growing coffee.
Alongside the local beans, the roastery also uses special shipments from Central America and Africa.
Why does the origin of the beans matter?
Where coffee comes from can affect its flavour and aroma.
The way the beans are processed, the roast level and how the drink is made all shape the final result as well.
For example, some beans may suit espresso, while others are better for brewing methods such as filter.
Thai coffee - beyond beans grown abroad
Thailand isn't as closely associated with coffee around the world as Colombia, Ethiopia or Brazil, but in recent years a significant local coffee scene has developed there.
Roasteries like Bubba's let you get to know Thai coffee through a place that handles the beans itself, not just through a drink served in a cafe.
If you're interested in coffee, it's a chance to try produce from other parts of Thailand, even while you're on holiday in the southern islands.
Taking beans home
Yes. The roastery sells bagged coffee, and you can buy it as whole beans or ground.
The Bubba's shop displays, among others, the Houseblend at a medium roast, the Bold Roast at a dark roast, and single-origin coffee from northern Thailand, such as Pasemuta Natural from Chiang Mai.
If you like making coffee at home, it can be a useful souvenir from your trip to Thailand, instead of the usual tourist products.
Choose the grind to match the equipment you brew with, or buy whole beans if you have a grinder at home.
The breakfast and brunch menu - who is it for?
Bubba's mainly suits anyone looking for a Western-style cafe with the focus on coffee, breakfast and brunch.
It isn't a small Thai food stall, but a place with a varied menu, a designed space and service geared to sitting a while over a meal.
You'll find dishes based on eggs, breads, vegetables and bowls, alongside other brunch dishes.
Vegetable and pulse-based dishes
Alongside the egg-and-bacon breakfasts, the menu also has dishes based on vegetables and pulses, such as the falafel bowl we ordered.
If you avoid certain foods or follow a special diet, check the ingredients of the specific dish when you order.
The cafe says you can contact it in advance about dietary requirements.
And what about gluten-free food?
It's important to distinguish between a dish that has no gluten in its list of ingredients and a dish prepared in conditions suitable for people with coeliac disease.
In a cafe that serves breads, toast and pastries, anyone who needs to avoid cross-contamination completely should ask the staff directly how the food is prepared.
The three Bubba's branches on Koh Phangan
Bubba's runs three cafes on Koh Phangan, each with a slightly different location and role.
Bubba's Roastery - Haad Yao
This is the branch where the roastery is.
It particularly suits anyone travelling around the Haad Yao area, looking for breakfast or wanting to buy coffee beans roasted on the island.
Bubba's Coffee - Baan Tai
The Baan Tai branch is the chain's first, open since 2015.
It's in the south-west of Koh Phangan and serves coffee and breakfast.
Bubba's Coffee - Thong Sala
The Thong Sala branch is in the island's main commercial area, near the pier.
Its location is handy if you're arriving on or leaving Koh Phangan by ferry, or if you're around Thong Sala.
If you specifically want to see the roastery itself, choose the Haad Yao branch.
